Wedding Plans, Americano’s & Quinoa

Good morning everyone! I hope you all enjoyed your weekend!

Weekends lately have been so nice. This weekend was full of Wedding Planning, visiting friends, and having fun.

Friday I worked morning until about 1:00 and then took myself out for a few hours. I bought myself a Starbucks American0, and added a little half & half. I’ve never had this before, and I loved it! I loved that it was strong in flavor & had a little creaminess to it. Cheaper, too — $2.55 vs. over $4.00 for a latte!

After stopping by Starbucks, I went and hungout with two little munchkins that I babysat before. Harper & Kampbell. I didn’t take a photo.

Okay guys. New goal this week is: TAKE PEOPLE PICTURES.

I have been so bad about taking people pictures in the last few months.

Bloggers — do you ever find that you forget to take people pictures since you’re always taking pictures of “stuff” all the time?

After visiting the kids I came home and did some Wedding Planning outside. I was prepping for Saturday when Marco’s Aunt Leslie & I were putting the invitations together.

I did more of that early Saturday morning before I headed over to her house.

We spent 6 hours putting these together! We had fun though. We talked a lot, had lunch, and drank Coffee :)

Oh, I wanted to share this with you! This is the view from our friends apartment that lives in the place we’re going to get in July. This is the view from his side. Ours is the other side of Ventura. Isn’t this so pretty?!

This weekend was full of quinoa. I’m on a quinoa kick!

I wanted to share some ideas with you so you could make your own Quinoa salads & meals this week :)

This is one Marco’s aunt made for me:

  • cold Quinoa
  • diced komatos
  • avocado
  • fresh cilantro
  • steamed lentils
  • TJ’s Cilantro Dressing

Here’s a “bowl” style Quinoa that I made:

  • warm quinoa
  • sauteed tofu, spinach, and garlic in olive oil
  • fresh sliced tomatoes & avocado
  • soy sauce & hot oil on top
  • plus S+P

And this one I used the leftovers to make a salad. Cook once, eat twice. Thanks IIN!

  • spinach cut up into small pieces
  • arugula
  • cold: leftover tofu, spinach, & quinoa mixed together
  • feta cheese
  • avocado
  • goddess dressing + a little ACV

And then to go with it, Marco & I split a quesadilla with mozzarella cheese on Ezekiel tortillas. So yummy!

Right now we’re trying to balance saving & still going out and having fun. We’re really good at saving, so mostly, we’re working on still going out :) Here are some things we’ve been doing that you can do too!

  1. Making dinner at home, then going out for a drink
  2. BBQ’s with friends
  3. Taking walks at the beach
  4. Going to the Jacuzzi
  5. Riding our bikes
  6. Walking around Downtown
  7. Making dinner at home and sitting outside
  8. Buying whole foods and cooking from scratch
  9. And of course… using Giftcard’s that we already have :)
